Ingredients

6 chicken breasts, bone-in and skin on
Kosher salt and ground black pepper
1 tablespoon Worcestershire sauce
1 tablespoon liquid smoke, hickory flavor
1 tablespoon chili powder
1 tablespoon dried minced onion
2 teaspoons ground cumin
2 teaspoons granulated garlic or garlic powder
2 teaspoons dried thyme
2 teaspoons dried oregano

Directions

Preheat the oven to 375F.

Season the chicken breasts with the kosher salt and black pepper. Lay the breasts in a 9 x 13 baking dish.

Combine the chili powder, dried minced onion, cumin, garlic, thyme and oregano in a small bowl and stir to thoroughly mix the spices.

Stir together the Worcestershire sauce and liquid smoke. Drizzle the mixture over the chicken breasts, then sprinkle them with the mixed spices.

Cover the dish with aluminum foil and back for 1 hour in the preheated oven. Remove the foil, then cook for another 15 minutes or until the chicken is cooked through and there is no pink in the center of the breast.

Food For Thought - This is not a traditional barbecue sauce, as you notice there is no tomato product.

To give it a more familiar flavor, mix the above ingredients with 1/4 cup chili sauce or ketchup, 1/4 cup dark brown sugar and 3 tablespoons of apple cider vinegar.

Make sure the brown sugar is dissolved in the vinegar before adding the other ingredients.

Good To Know - This basic spice mix is good for any cut of chicken, as well as pork chops and pork tenderloin.

To intensify the herbal effect, spread the seasoning mix over the pieces of chicken arranged in a baking dish, wrap the dish in plastic, and marinate the chicken at least 6 hours or overnight.
