Boneless Chicken Breast Recipes

Boneless Chicken breast recipes can be complicated but this is an amazing recipe for boneless skinless chicken breast simply baked in butter and tarragon.

It doesn't seem like much, but the pungent flavor of the tarragon is enough to carry the dish. The tarragon and butter become the sauce for the chicken breasts with hardly any effort on your part.


This is an impressive menu item to share with guests or to feed a hungry family in less than 30 minutes!

Boneless Chicken Breasts with Tarragon Butter Sauce

Ingredients

4 boneless chicken breasts - skinless
1/2 tablespoon fresh tarragon, minced, or 1 teaspoon dried
1 tablespoon fresh squeezed lemon juice
4 ounces (1 stick) unsalted butter
kosher salt and black pepper to taste
Parchment paper

Directions

Preheat the oven to 400F.

Season the chicken breasts with the kosher salt and black pepper on both sides. Sprinkle the chicken breasts with the fresh (or dried) tarragon and the fresh lemon juice.

Refrigerate the chicken for about 30 minutes to give the seasonings a little time to be absorbed. The lemon juice will make the chicken very tender if it's allowed to marinate a little.

Heat a skillet or Dutch oven that's large enough to hold the chicken breasts in a single layer and melt the butter. Coat the chicken breasts on both sides with the melted butter and then layer them in the pan.

Cover the chicken with a circle of parchment paper then cover the pan with a lid.

Bake the chicken for 20 to 25 minutes or until it is no longer pink - the internal temperature should be 180F.

Remove the chicken breasts to a heated platter and pour the pan juices over them and serve with your favorite vegetables or potatoes. This would make a great lunchtime entree with a small mixed green salad.
