We've got many Chicken Breast Crock Pot Recipes on the chicken recipes site but to me this is one of the best. Chicken breasts are simmered with mushrooms and onions to perfection.
This crock pot recipe is easy to prepare with boneless chicken breasts and have ready when you come from work or a weekend adventure.
4 skinless boneless chicken breasts
4 russet potatoes, peeled and cubed into 1-inch pieces
1 can (10.75 ounces) condensed cream of mushroom soup
1 can (10.75 ounces) condensed milk
1 tablespoon cornstarch
1 package onion soup mix
kosher salt and ground black pepper to taste
Whisk together the cream of mushroom soup, the condensed milk and the cornstarch until everything is well blended. Pour in the dry onion soup and mix well.
Put the cubed potatoes in the bottom of a crockpot and layer the chicken breasts on top. Pour the soup mixture over the chicken.
Turn the temperature to low and cook for 8 to 10 hours. The potatoes should be cooked through but not falling apart.

On Your Own - Spice this easy dish up to suit your own style.
Add 1/2 cup sliced fresh mushrooms and parsley flakes 1 hour before the dish is done. Or substitute 1 can of onion soup for the condensed milk.
Increase the cornstarch to 3 tablespoons to make it rich and creamy.
Top with fresh chopped parsley and paprika when you serve this to family or friends - it will look freshly prepared and look like you took all day!
