Of all the chicken enchilada recipes out there this one is probably tops.

This creamy, cheesy recipe for chicken enchiladas is more like baked burritos, no messy sauces to deal with.


Simmer the cream cheese and salsa and then add a can of beans and cooked chicken. Spread the mixture over flour tortillas and roll them up. The enchiladas are smothered in shredded cheese and baked until heated through.

Now that's easy chicken enchiladas!

I like to serve my chicken enchilada recipes with rice, guacamole and extra salsa on the side.

Just A Note - Almost all chicken enchilada recipes I've seen use flour tortillas. Beef enchiladas are traditionally made with corn tortillas.

If you would rather use corn, give them a few seconds over a burner or in a hot skillet to make them more flexible. Then just roll them up and proceed as directed in the recipe below.

Ingredients

2 cups cooked chicken, shredded or diced
6 flour tortillas
1 package (8 ounces) cream cheese, softened
1 cup fresh salsa
1 can (15.5 ounces) pinto beans
2 cups Colby-Jack cheese, shredded

Directions

Preheat the oven to 350F. Lightly grease or spray a 9 x 13-inch baking dish.

Heat the cream cheese in a medium saucepan over medium-low heat. Stir in the salsa and let the pot simmer until the cream cheese is melted and well blended with the salsa.

Stir in the cooked chicken and the beans.

Spread the chicken mixture over the surface of each tortilla. Roll them up and put them in the prepared baking dish, seam-side down.

Layer the shredded cheese over the enchiladas, cover the dish with foil and bake for about 30 minutes or until heated through and the cheese is melted.

Food For Thought - Serve these enchiladas with your favorite garnishes: guacamole, sour cream, shredded lettuce or diced tomatoes.

Along side have extra salsa, either the freshly chopped "pico de gallo" or a jar of your favorite prepared brand.

Crushed tortilla chips sprinkled over the top of the cheese gives these enchiladas some welcomed crunch.

Chopped black olives and diced red onion add some color and texture.

Good To Know - As far as chicken enchilada recipes go these enchiladas are on the mild scale, which is a good thing to keep in mind for youngsters whose sense of spice might not be to developed.

On the other hand, the heat lovers might need some extra punch. Add 2 teaspoons chili garlic paste, 1 tablespoon of chili powder, 2 teaspoons chili oil and 1 teaspoon crushed red chili flakes to get the fire started.
