The fact is making chicken stock just got easier and it's almost like Grandma's.
Making chicken stock from scratch is a time consuming thing even though it's not very hard.
When you make chicken stock with this technique it's almost as good as a homemade basic chicken stock but much quicker.
It has store bought Swanson chicken broth and rotisserie chicken bones and skin as the base. You add veggies and seasoning just like making chicken stock from scratch but the cooking time is much less.
The veggies are also chopped finer than when making stock from scratch.
The reason for that is because the cooking time is so short they need to have more surface area exposed to release their flavors.
If you're in a pinch for time give this Cheaters Chicken Stock Recipe a try. It might just become your go-to recipe whenever you don't want to make regular Homemade Chicken Stock.
I do recommend Swanson Chicken Broth. If your grocery has their Certified Organic Free Range Chicken Broth it's the best.
Yield 3 1/2 quarts
Ingredients1 48 Oz. Container Swanson's chicken broth
1 quart water
1 store-bought plain rotisserie chicken
3 tablespoons vegetable oil
2 large onions, cut into medium dice
2 large carrots, peeled and cut into 1/4 inch half rounds
2 large stalks celery, halved, sliced 1/4 inch thick
1 teaspoon dried thyme leaves
Bring the Swanson's chicken broth and water to a simmer over medium-high heat in a large stock pot.
Separate the rotisserie chicken meat from the skin and bones and reserve the meat for another use.
Add the skin and bones to the simmering broth along with the chopped veggies.
Reduce the heat to low, partially cover and simmer until the bones release their flavor. Approximately one hour.
Note: An hour is long enough but there's no reason not to simmer this stock longer. It will only get better.
Strain the broth through a colander into a large container. Reserve the chicken broth and discard the skin and bones and spent veggies.
Your stock is now ready to use in any recipe that calls for homemade chicken stock.

If you're not ready to use it you can refrigerate your cheaters chicken stock for up to 3 days. It freezes beautifully and will last approximately 3 months in the freezer.
Want a super chicken soup instead of just plain stock?
Just add a package of frozen mixed veggies and the reserved chicken meat back to the stock. Throw in some egg noodles and cook 8 to 10 minutes or until the noodles are done. Keep this in mind anytime you're making chicken stock!
