Chicken Tikka Masala

Chicken Tikka Masala is a dish that originated in India. However it's such a great dish that it's now prepared and enjoyed worldwide.

There are probably many versions of Tikka Masala but I know this one is authentic because it's from my new found friend Shalini and is on her website Easy Indian Food Recipes.

Shalini's Chicken Tikka Recipe

Chicken Tikka Masala, the dish needs no introduction. From a Indian dish it has now become a UK dish that's all we can say.

Recipe Ingredients

Chicken breast pieces 1" (boneless) - 1kg
Oil - 5 tbsp
Yogurt - 1 cup
Cream - 1/4 cup
Tomatoes (cut to 1" pieces) - 2
Tomato Puree - 3 tbsp
Onion (sliced to disc) - 2
Onions (chopped) - 1 Big
Coriander Leaves (chopped) - Hand full
Lemon Juice - 1 tbsp
Green Chillies (chopped) - 2
Cumin Seeds - 1 tsp
Coriander Powder - 1 tsp
Cloves - 3
Cinnmaon Stick 1" - 2
Green Cardamom - 3
Whole Garam Masala - 1 tsp
Cumin Powder - 1 tsp
Red Chilli Powder - 1 tsp
Turmeric Powder - 1/2 tsp
Nutmeg (Jaiphal) Powder - 1 /2 tsp
Ginger Garlic Paste - 3 tbsp
Mace (Javitri) - 1/2 tsp
Cashew Nuts (broken) - 1 tbsp
Salt to taste

Preparation

First clean, debone and cut chicken pieces to 1 inch size.

Take a medium size bowl and put red chilli powder, ginger garlic paste, coriander powder, turmeric powder, yogurt, salt (1/2 tsp), lime juice and oil (3 tbsp). Make a marinade by mixing all these ingredients properly.

Apply this marinade to chicken pieces and leave it aside for 1 hour. You can apply this marinade to vegetables, tomatoes and slices onions also.

After 1 hour skewer the chicken pieces and cook in a grill / tandoor / pan along with the vegetables. When chicken and vegetable pieces are half cooked take them off the heat.

Take a pan and heat oil (2 to 3 tbsp) in it. Once it is hot add whole garam Masala, green cardamom, cloves, cinnamon sticks and cumin seeds. As seeds starts sputtering add finely chopped onions. Sauté for a minute and add salt(1/2 tsp) , turmeric powder(1/2 tsp), cumin powder (1 tsp), coriander powder(1 tsp), chilli powder. Add little water so that masalas get evenly cooked. Add tomato puree.

Put the lid and let it cook for 10 minute on medium flame.

As the mixture stars boiling add chicken and vegetable pieces. Cook for few more minutes and serve hot your tikka masala after garnishing with Coriander leaves.
