This Crock Pot Chicken Cacciatore is a time saving slow cooker recipe sure to please everyone.

Chicken cacciatore is a classic recipe that uses a whole chicken.

We use chicken breasts in this version that comes out moist and flavorful.


The chicken breasts are combined in a slow cooker with mushrooms, onions and garlic.

The slow simmering crockpot guarantees your meal will be done in time and make an excellent accompaniment to angel hair or penne pasta.

Use a purchased marinara sauce or make your own, and this tender chicken cacciatore will become a permanent favorite.

Crock Pot Chicken Cacciatore

Ingredients

6 each skinless chicken breasts
1 jar (28-ounces) marinara sauce, purchased or your own
2 medium green bell peppers, cut into 1-inch cubes, seeds removed
8 ounces fresh button mushrooms, cleaned, stemmed and sliced
1 large yellow onion, cut into fine dice, about 1/4- inch
2 tablespoons minced garlic, about 4 large cloves

Directions

Layer the chicken breasts in the bottom of the crockpot. Cover the chicken with the marinara sauce, then add the cubes of green bell pepper, the sliced mushrooms, the diced onions and garlic.

Cover the crockpot and cook on low for 7 to 9 hours.

Serves 4 to 6

Good To Know - If you choose to use boneless chicken breasts, cook the cacciatore for only 4 to 5 hours, any longer will change the texture.

On Your Own - Adding extra garlic and onions will enhance the flavor of your finished dish. Is rosemary or basil one of your favorite herbs? Try 1 tablespoon of fresh rosemary or 1/4 cup shredded basil to add some Mediterranean style. Dried oregano is another good option.

Food For Thought - Serve the chicken cacciatore over a bed of cooked pasta with all the sauce. Top with a little grated Parmesan cheese for a classic accent.
