Here's a quick and Easy Chicken Salad Recipe combining several favorite flavors.

Turn boneless skinless chicken breasts into a tasty Caesar salad with Cajun-spiced chicken. To bring it all together, thick smoked bacon is fried and crumbled, combined with Parmesan cheese, Caesar salad dressing and romaine lettuce.

Toss with the sauteed Cajun chicken and treat yourself to a restaurant quality salad for a fraction of the cost.


Just A Note - Cooked, crumbled bacon will last up to 3 days if stored in an airtight container. Line the container with a paper towel after it has cooled down.

If it is too warm when you store it, the condensation in the container will make it soggy.

Cajun Style Easy Chicken Salad Recipe With Caesar Dressing

Ingredients

4 boneless skinless chicken breasts
1/2 pound thick smoked bacon, chopped
1 tablespoon Cajun seasoning
1/2 cup Caesar salad dressing
1/4 cup Parmesan cheese, grated
1 head romaine lettuce, cleaned and cut into bite-sized pieces

Directions

Heat a large skillet and fry the chopped bacon. When it is browned and crispy, remove it to drain on paper towels.

Season the chicken breasts with the Cajun seasonings on both sides. Saute the chicken in the bacon drippings, about 6 to 8 minutes per side. The chicken is cooked when it is no longer pink in the center and the juices run clear.

Set the chicken aside, and when it's cool enough to handle, cut the breasts into strips, about 1-inch wide.

Combine the romaine lettuce, Parmesan cheese and crumbled bacon in a salad bowl. Add enough of the Caesar salad dressing to coat the lettuce. Toss the ingredients well.

Portion the salad onto chilled plates and top each portion with strips of the cooked chicken.

Good To Know - Use another seasoning mix to coat the chicken once you have the technique down.

Italian-style seasoning mixes spice up chicken in a less heat-intense way than the Cajun blends but still add plenty of flavor. Toss some of the grated Parmesan cheese in with the seasoning mix to give the chicken a little more of a crust.

Food For Thought - To make this salad more of a Caesar, add some crispy croutons made from dry sourdough bread. Grilled slices from a baguette, brushed with a little olive oil and garlic make appealing garnishes set around the sides of the finished salad.
