You would be hard pressed to find a recipe for lemon chicken that's any easier or that tastes any better. It's so good that it also qualifies as the best grilled chicken breast recipe.
The boneless, skinless chicken breasts are marinated in a simple solution of lemon juice with soy sauce and ginger. It doesn't get any easier than that.
You also have some flexibility with the marination time. As little as an hour will add great lemon flavor and you can go as long as twelve hours. Be careful though, citrus will eventually turn chicken breasts to mush!

4 boneless skinless chicken breasts
1/2 cup fresh lemon juice
1/2 cup soy sauce
1 teaspoon fresh ginger, minced or 1/2 teaspoon ground ginger
Kosher salt and ground black pepper
Whisk together the fresh lemon juice, soy sauce and ginger.
Season the chicken breasts with the kosher salt and black pepper.
Pour the marinade into a resealable plastic bag and add the chicken. Massage the chicken in the bag and let it refrigerate for an hour or overnight.
Light a charcoal barbeque or heat a gas grill. Lightly oil the grate.
Remove the breasts from the marinade and shake off any excess. Discard the marinade.
Grill the breasts about 6 to 8 minutes per side, or until there is no pink at the center of the breast.
Food For Thought - You can cut some of the tang from the lemon juice by using 1/2 lemon juice and 1/2 orange or lime juice. Apple juice would also balance out the lemon juice.
Good to Know - The longer the chicken is marinated the more tender it will be.
Grilling can be a drying method of cooking, and this type of marinade really penetrates the flesh and breaks down the fibers, allowing the heat to go through the flesh faster, there by not drying it out as much.
