I love Indian Chicken Recipes and this Indian Chicken Curry recipe is one I prepare a lot.
It's more than likely not an authentic Indian recipe but an Americanized version.
Authentic Indian spices can be hard to find.
For instance I know that cayenne is a western spice and Indian chili powder is more authentic. However you can enjoy an Indian type chicken recipe with readily available ingredients by following this recipe.
3 tablespoons olive oil
1 small onion, chopped
2 cloves garlic, minced
3 tablespoons curry powder
1 teaspoon ground cinnamon
1 teaspoon paprika
1 bay leaf
1/2 teaspoon grated fresh ginger root
1/2 teaspoon white sugar
salt to taste
2 skinless, boneless chicken breast halves in bite sized pieces
1 tablespoon tomato paste
1 cup plain yogurt
3/4 cup coconut milk
1/2 lemon, juiced
1/2 teaspoon cayenne pepper
Heat the olive oil in a skillet over medium heat. Sauté the chopped onion until it is lightly browned. Stir in the minced garlic, curry powder, ground cinnamon, paprika, bay leaf, grated fresh ginger root, white sugar and salt. Continue stirring the mixture for 2 minutes.
Add the boneless chicken breast halves, tomato paste, plain yogurt, and the coconut milk. Bring the mixture to a boil and then reduce the heat.
Simmer for 20 to 25 minutes.
Remove the bay leaf, and stir in the lemon juice and cayenne pepper. Simmer for 5 more minutes.
Serve with Jasmine rice.
Even though this is an adaptation of yellow chicken curry from India and not authentic the aromas and flavors are a still a delight to the senses! Indian food is soooo good!
